Vinegar production can be a valuable small industry in developing countries. The basic principles of the different production methods used are briefly described and a detailed account is given of the process adopted at the Tropical Products Institute for the small-scale production of vinegar from bananas. Analytical details are presented for banana and other tropical fruit vinegars prepared in this way. A bibliography covering general aspects of vinegar brewing and the use of tropical products as substrates is given.
